The Science Behind Stomach Acid

Digestion begins before the first bite — between 30–50% of acid production is triggered by sensory stimuli alone (sight, smell, taste). This cephalic phase is mediated through the vagus nerve, stimulating gastric acid secretion before food even reaches the stomach.
